WHERE THE GRAPES COME FROM Some of the grapes come from the Quinta do Noval vineyard, the rest from A-rated vineyards at the heart of the Douro valley.
VINIFICATION A part of the grapes is trodden by foot in “lagares”, traditional stone vats from the Quinta. Another is crushed mechanically in steel vats. This mechanical pressing process was designed specifically for Noval, geared to the requirements of our technical team.
MATURING It is matured for 2 years in oak casks and steel vats to preserve the wine’s freshness.
