Æ is a collaboration of three french researchers sharing the passion of arts and gastronomy. By questionning the world through the five senses, they aim to develop a culinary experience of emotions. Morgane Forest is a research analyst in an institute of qualitative studies specialized in food-processing industry.
She studied literature at the Sorbonne in Paris and is actually member of the Institut des Hautes Etudes du Goût, de la Gastronomie et des Arts de la table in Reims. Charlotte Forest is a chef and research analyst in an institute of qualitative studies specialized in food-processing industry.
She studied at the College of French cooking Grégoire Ferrandi in Paris and is actually member of the Institut des Hautes Etudes du Goût, de la Gastronomie et des Arts de la table in Reims. Antoine Duhamel is a photographer specialized in design, arts and architecture.
Food appeals to our five senses: sight, smell, hearing, touch, taste. Do we really take time to consider them all? What is the impact of our culture in the act of tasting? Through a series of five games featuring every singular sense, the Æ project aims to understand and probe the singularity of tasting.
